I can't look at a sloppy joe without hearing Adam Sandler singing about the lunch lady. Last night we had sloppy joes, sloppy, sloppy joes. I know you don't care, I just thought I'd share how quick and easy it was. I may be the queen of lazy cooks, but I know I'm not the only one.
We had spaghetti one night this week, just Mitch and I. Remember, our nest recently became empty. I haven't quite adjusted to cooking for just the two of us. The term serving size takes on a whole new meaning when you're cooking for a teenage boy. Anyway, I made way too much sauce. Not usually a problem, since I happen to love left-over spaghetti. This time, my sauce/noodle ratio was off, leaving me with no noodles and an excess of sauce. I know, spaghetti sauce freezes well and I could have done that. Instead, I squeezed another meal for this week out of it. A meal that involved little more than reheating, my favorite kind of cooking. To the left-over meat sauce I added, some brown sugar, spicy brown mustard, and a little Worcestershire sauce. Throw it on a bun, open a can of green beans and you've got dinner. Not a great dinner, but dinner, and folks around here are perfectly happy with any dinner.

My son just got out of the Navy, I remember those letters. Actually I have a lot of emails as he was able to email from Ship. I'm planning on putting them in a book to save.
I hear you on the smaller meals. I haven't figured it out yet.

LOL I had never heard that song. I love Adam Sandlers songs. Thanks for the laugh. I'm always finding ways to use up all the left overs. That's a great idea turning spaghetti sauce into sloppy joes. I will have to try that next time I have excess!

I haven't had sloppy joes in years!! I love them my hubby doesn't like anything with tomatoes in it...no Italian food...I love it so fix it when family coming and fix him a hamburger steak with baked potato.

Ha! We love that song!Right before Thanksgiving, my daughter had a group of seven girls over to do a school project (17-18 year old very smart AP girls) They were over everynight until suppertime. One night they were going to run over and my daughter told us to go ahead and eat. I said, Well, I feel bad eating in front of them. She looked at me and rolled her eyes and said(as only a 18 year old girl can) Don't worry, noone will be envious of your sloppy- joes! So, I had the last laugh when the girls saw what I made they all danced around and sang that song! All but my daughter! Merry Christmas! p.s. I love sloppy joes and am glad to see someone else who does as well. And leftover spaghetti sauce always tastes better to me than when it's first done. I like to heat it up and put it on bread for lunch, when my siblings and I were little we called this "spaghetti sandwiches". We still like to eat it this way.
